Selon cet expert qui a particip\u00e9 \u00e0 la r\u00e9daction d&rsquo;un rapport de l&rsquo;Agence nationale de s\u00e9curit\u00e9 sanitaire de l&rsquo;alimentation, de l&rsquo;environnement et du travail (Anses) sur la dangerosit\u00e9 des nitrites, <strong>ce plan ne tient pas compte des donn\u00e9es scientifiques.<\/strong><\/p>\n<p>Un rapport de l&rsquo;Anses (Agence Nationale de s\u00e9curit\u00e9 sanitaire de l&rsquo;alimentation, de l&rsquo;environnement et du travail) a confirm\u00e9 un lien entre l&rsquo;utilisation de nitrites dans la charcuterie et un risque accru de cancer colorectal. Malgr\u00e9 cela, le minist\u00e8re de l&rsquo;Agriculture n&rsquo;a toujours pas interdit l&rsquo;utilisation de ces conservateurs chimiques.<br \/>\nPourtant, l&rsquo;Anses qui a pour mission de fournir des recommandations sanitaires bas\u00e9es sur l&rsquo;\u00e9tat de la science a remis un rapport en juillet 2022, qui a \u00e9valu\u00e9 le risque global des nitrites et indique clairement que ces substances chimiques utilis\u00e9es comme conservateurs et qui donnent au jambon sa belle couleur rose, sont canc\u00e9rig\u00e8nes. La responsabilit\u00e9 de la gestion du risque incombe ensuite \u00e0 l&rsquo;\u00c9tat. <strong><em>\u00abLe minist\u00e8re de l\u2019Agriculture ne peut \u00eatre \u00e0 la fois juge et partie, s\u2019occuper de la sant\u00e9 de l\u2019agro-industrie et de la n\u00f4tre\u00bb<\/em><\/strong>, juge le chercheur J\u00e9r\u00f4me Santolini.<\/p>\n<blockquote><p><strong>Vigilance sur les appellations \u00ab\u00a0sans additifs\u00a0\u00bb<\/strong><\/p>\n<p>La DGCCRF a confirm\u00e9 qu&rsquo;elle m\u00e8ne des enqu\u00eates sur l&rsquo;utilisation de proc\u00e9d\u00e9s de saumurage alternatifs et d&rsquo;autres falsifications potentielles, mais les r\u00e9sultats ne sont pas encore disponibles. En attendant, la R\u00e9pression des fraudes surveille de pr\u00e8s les all\u00e9gations \u00ab\u00a0sans\u00a0\u00bb, telles que \u00ab\u00a0sans additif\u00a0\u00bb, sur les \u00e9tiquettes de produits. Elle v\u00e9rifie que ces affirmations ne sont pas trompeuses et ne contournent pas la r\u00e9glementation en omettant des additifs de la liste des ingr\u00e9dients. Fleury Michon, le leader des ventes de jambon en France, a retir\u00e9 la mention \u00ab\u00a0sans nitrites ajout\u00e9s\u00a0\u00bb de ses jambons cuits dans un bouillon de l\u00e9gumes en avril dernier et les vend d\u00e9sormais comme des produits standards, en raison d&rsquo;une erreur marketing selon le directeur marketing du groupe, David Garbous.<\/p><\/blockquote>\n<p><strong>POUR RAPPEL<\/strong><br \/>\nLes additifs nitr\u00e9s, identifi\u00e9s sous les codes E249, E250, E251, E252, sont depuis plusieurs ann\u00e9es suspect\u00e9s de nuire \u00e0 la sant\u00e9 et sont aujourd&rsquo;hui point\u00e9s du doigt par les autorit\u00e9s sanitaires.
