J\u2019ai v\u00e9rifi\u00e9 les prix et la liste des ingr\u00e9dients de quelques enseignes artisanales, classiques (les industrielles de ville) et celles des grandes surfaces.<br \/>\nLes prix varient de 8 \u00e0 40\u00a0euros le kilo pour une m\u00eame d\u00e9nomination\u00a0: la galette frangipane, mais pas pour le m\u00eame produit.<br \/>\nOn trouve de tout\u00a0: des galettes artisanales de qualit\u00e9 (avec un prix \u00e9lev\u00e9), des galettes artisanales avec des ingr\u00e9dients m\u00e9diocres comme le glucose-fructose ou le sorbitol (mais toujours \u00e0 prix \u00e9lev\u00e9) et des galettes de base sans aucun int\u00e9r\u00eat gustatif. Et c\u2019est l\u00e0 que j\u2019ai \u00e9t\u00e9 surpris<\/span><span class=\"s2\">\u2009<\/span><span class=\"s1\">!<br \/>\nJ\u2019ai compar\u00e9 aussi plusieurs grandes surfaces ou l\u2019on peut aussi retrouver de v\u00e9ritables usines \u00e0 additifs (ni moins ni plus que dans les \u00ab<\/span><span class=\"s2\">\u2009<\/span><span class=\"s1\">traditionnelles<\/span><span class=\"s2\">\u2009<\/span><span class=\"s1\">\u00bb p\u00e2tisseries industrielles des centres-ville), sauf que dans un Carrefour j\u2019ai eu une double surprise.<\/span><\/p>\n<ul class=\"ul1\">\n<li class=\"li2\"><span class=\"s1\">Une galette frangipane \u00e0 13,24\u00a0\u20ac\/kg avec des ingr\u00e9dients tr\u00e8s honorables (et bien plus honorables que beaucoup de galettes soi-disant artisanales)<\/span><\/li>\n<li class=\"li2\"><span class=\"s1\">Une galette presque identique, plus ch\u00e8re au kilo (19,89\u00a0\u20ac\/kg) \u00ab<\/span><span class=\"s2\">\u2009<\/span><span class=\"s1\">APPROUV\u00c9 PAR GAULT &amp; MILLAU<\/span><span class=\"s2\">\u2009<\/span><span class=\"s1\">\u00bb pour une liste d\u2019ingr\u00e9dients \u00e0 base de produits transform\u00e9s (sirop de sucre inverti, sirop de sorbitol, amidon de bl\u00e9).\u00a0<\/span><\/li>\n<\/ul>\n<p class=\"p1\"><span class=\"s1\">Au regard des deux galettes, produites par la m\u00eame enseigne, on se demande quel fut le crit\u00e8re \u00ab<\/span><span class=\"s2\">\u2009<\/span><span class=\"s1\">d\u2019approbation<\/span><span class=\"s2\">\u2009<\/span><span class=\"s1\">\u00bb de la part de Gault &amp; Millau.
