{"id":2336,"date":"2016-11-23T19:00:34","date_gmt":"2016-11-23T18:00:34","guid":{"rendered":"http:\/\/www.stefaneguilbaud.com\/blog\/?p=2336"},"modified":"2016-11-23T16:32:37","modified_gmt":"2016-11-23T15:32:37","slug":"cacao-maigre-et-prix-fort","status":"publish","type":"post","link":"https:\/\/www.stefaneguilbaud.com\/blog\/?p=2336","title":{"rendered":"Cacao maigre et prix fort !"},"content":{"rendered":"<p>J&rsquo;ai une affection particuli\u00e8re pour le <a href=\"http:\/\/www.stefaneguilbaud.com\/blog\/?p=840\">chocolat<\/a> et le cacao.<br \/>\nMais, pour un vrai chocolat, un produit sans artifice et sans cache mis\u00e8re \u00e0 grand renfort de sucre.\u2028 Un chocolat digne de ce nom, issu d&rsquo;une s\u00e9lection de f\u00e8ves (dont la plus r\u00e9put\u00e9e est la f\u00e8ve Criollo cultiv\u00e9e au P\u00e9rou, \u00e0 l&rsquo;ombre des pins), ne n\u00e9cessitant pas l&rsquo;ajout de sucre. Pourquoi donc ?<\/p>\n<p>Car le cacao a une \u00e2pret\u00e9 naturelle certes, mais pas d&rsquo;amertume. Le gout d\u00e9sagr\u00e9able amer (que le marketing nomme joliment cors\u00e9) est en fait d\u00fb au type de f\u00e8ve (souvent <a href=\"http:\/\/www.stefaneguilbaud.com\/blog\/?p=854\">Forestero<\/a>) et sa culture industrialis\u00e9e. Haut rendement, exposition en plein soleil\u2026\u2028 Forc\u00e9ment, au final, pour consommer le produit, on est oblig\u00e9 de le sucrer lourdement.<\/p>\n<p><strong>Mais en consommant ce type de chocolat industriel, on rencontre 5 probl\u00e8mes :<\/strong><br \/>\n<strong>\u20281.<\/strong> On encourage la surproduction massive de cultures de cacao industriel sans grand int\u00e9r\u00eat, si ce n&rsquo;est d\u00e9truire la flore environnante, par manque de biodiversit\u00e9.<br \/>\n<strong>2.<\/strong> On modifie le cours du cacao mondial en faisant baisser les prix de surproduction et en encourageant la surconsommation mondiale. Du coup, la demande augmente et on demande aux producteurs \u00e0 produire davantage. Qualit\u00e9 qui chute, rendement qui augmente, consommation qui explose.<br \/>\n<strong>\u20283.<\/strong> On \u00e9limine la nature m\u00eame du chocolat qui consiste \u00e0 l\u00e9g\u00e8rement sucrer un cacao. Un chocolat noir se retrouve ainsi autoris\u00e9 \u00e0 c\u00f4toyer 67% de sucre et dans certains pays jusqu&rsquo;\u00e0 70%. Ce n&rsquo;est plus un chocolat, mais une sucrerie. Que dire lorsqu&rsquo;on incorpore du lait et des produits sucr\u00e9s (caramel, fruits\u2026)<br \/>\n<strong>4.<\/strong> On pr\u00e9sente une information nutritionnelle \u00e0 propos du cacao. Il est d\u00e9graiss\u00e9 ! Chouette ? Non, dommage plut\u00f4t. Tout l&rsquo;int\u00e9r\u00eat d&rsquo;un r\u00e9gime alimentaire \u00e0 faible index glyc\u00e9mique est d\u2019ajustement \u00e0 avoir un chocolat qui contient toute sa graisse, sa bonne graisse : le beurre de cacao. Et l\u00e0, on l&rsquo;enl\u00e8ve, pour notre sant\u00e9 ? Non, je crois, plut\u00f4t qu&rsquo;il sert mieux l&rsquo;industriel \u00e0 l&rsquo;int\u00e9r\u00eat de sa marge, car le beurre de cacao coute tr\u00e8s cher.<br \/>\n<strong>\u20285.<\/strong> On encourage la population a consommer de plus en plus sucr\u00e9. L&rsquo;addiction se fait naturellement de plus en plus forte et les industriels en profitent pour confondre la diff\u00e9rence qu&rsquo;il peut y avoir entre un chocolat sucr\u00e9 et un sucre chocolat\u00e9. En effet, la mati\u00e8re premi\u00e8re a un coup et il est plus rentable de vendre du sucre au prix du cacao !<\/p>\n<p>Ainsi sur ce dernier point <a href=\"http:\/\/www.stefaneguilbaud.com\/blog\/?s=cacao\">[les diff\u00e9rents sujets sur le chocolat sont ici]<\/a>, on peut comparer rapidement deux produits bios. L&rsquo;un en grande surface, le \u00ab\u00a0BIO CARREFOUR\u00a0\u00bb \u00e0 32% , nomm\u00e9 PR\u00c9PARATION CHOCOLAT\u00c9E POUR BOISSON (en raison de sa faible teneur en cacao tout de m\u00eame) et l&rsquo;autre \u00ab\u00a0DESTINATION\u00a0\u00bb en magasin sp\u00e9cialis\u00e9 100%.
