{"id":1245,"date":"2015-04-10T07:00:54","date_gmt":"2015-04-10T06:00:54","guid":{"rendered":"http:\/\/www.stefaneguilbaud.com\/blog\/?p=1245"},"modified":"2015-05-09T19:04:09","modified_gmt":"2015-05-09T18:04:09","slug":"une-simplification-du-label-fait-maison","status":"publish","type":"post","link":"https:\/\/www.stefaneguilbaud.com\/blog\/?p=1245","title":{"rendered":"Une simplification du label \u00ab\u00a0fait maison\u00a0\u00bb."},"content":{"rendered":"<p>Le mardi 7 avril 2015, la secr\u00e9taire d\u2019\u00c9tat au Commerce et \u00e0 l\u2019Artisanat annonce que le gouvernement pr\u00e9voit, sous la forme d\u2019un nouveau d\u00e9cret, un renforcement et une simplification du label \u00ab\u00a0fait maison\u00a0\u00bb.<\/p>\n<p>L\u2019objectif est de <strong>\u00ab\u00a0<em>mettre en avant les plats cuits sur place<\/em>\u00a0\u00bb<\/strong> .\u2028 Le principal changement concernerait la mention \u00ab\u00a0<em><strong>fait mention<\/strong><\/em>\u00a0\u00bb. Dor\u00e9navant, un plat sous cette mention devrait \u00eatre \u00e9labor\u00e9 \u00e0 partir de \u00ab<em>\u00a0produits crus<\/em>\u00a0\u00bb et non plus de \u00ab\u00a0<em>produits bruts<\/em>\u00a0\u00bb.\u2028 Cela ne fait pas beaucoup de diff\u00e9rence sur le papier, mais dans les faits, c\u2019est une avanc\u00e9e en faveur du consommateur en \u00e9vitant les cuisines d\u2019assemblage \u00ab\u00a0<em>maquill\u00e9es<\/em>\u00a0\u00bb.<\/p>\n<p>Finis les produits industriels surgel\u00e9s pr\u00e9cuits\u2009!<br \/>\nDe toute fa\u00e7on, le d\u00e9cret\u00a0 <strong>Fait Maison<\/strong> du 13 juillet 2014 avait \u00e9t\u00e9 vivement critiqu\u00e9 par les chefs cuisiniers et les consommateurs, et pour cause. Sa lecture \u00e9tait sujette \u00e0 une trop grande interpr\u00e9tation\u2009!! Le journal \u201cLeMOnde\u201d nous informe\u00a0:\u00a0\u00ab <em>Le texte estimait notamment que les \u00e9tablissements pouvaient faire figurer sur la devanture ou la carte le logo \u2018fait maison\u2019 pour garantir une cuisine sur place \u00e0 partir de \u2018produits bruts ou de produits traditionnels de cuisine\u2019. Or il d\u00e9finissait le \u2018produit brut\u2019 non pas comme un produit frais, mais comme un \u2018produit alimentaire n\u2019ayant subi aucune modification importante\u2019.
